Fish salad “Aunt Mimi”

Ingredients for 4 servings:

  • 2 jars of fish (Bismarck herring)
  • 4 onions, white
  • 1 can of corn
  • 1 jar carrot(s)
  • 1 jar Miracle Whip, light
  • salt and pepper
  • Sugar (or liquid sweetener)

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

Cut the Bismarck herring into small pieces. Peel and finely slice the onions. If the carrots are too large, cut them into smaller pieces. Mix all ingredients well and refrigerate for at least 3 hours. It goes well with baguette. We always have this fish salad on New Year’s Eve and Ash Wednesday.
