Arugula and shrimp in a Grana Padano basket

Ingredients for 4 servings:

  • 200 g cheese, Grana Padano
  • 500 g arugula
  • 4 tbsp olive oil
  • 1 tbsp Balsamic vinegar Bianco
  • 8 shrimp(s)
  • Salt
  • Pepper, black from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the arugula and shake dry. Mix three tablespoons of oil, balsamic vinegar, salt, and pepper to make a vinaigrette and set aside. Sprinkle 50g of Grana Padano in a circle in a non-stick pan, melt over medium heat until golden brown, pour over an upturned cup, and let cool. Heat the remaining oil in a pan, sear the shrimp on both sides, then season with salt and pepper. Mix the arugula with the vinaigrette and serve with the shrimp in the Padano basket.
