Stuffed party tomatoes

Ingredients for 6 servings:

  • 20 m.-large tomato(s) (vine tomatoes), nice and firm, but ripe
  • 3 packs of cream cheese, 200g each
  • 1 pack of feta cheese
  • e.g. chives and parsley
  • 1 clove(s) garlic
  • salt and pepper
  • possibly sour cream

Working time approx. 1 hour; Total time approx. 1 hour

Cream cheese – feta mixture with herbs and garlic

Hollow out the tomatoes, but don’t throw away the cut-off tops, as they can still be used for decoration. Cut the feta into small pieces or crumble it and mix it with the cream cheese mixture. If the mixture is too thick, you can add sour cream if desired. Remove the stalks from the parsley and finely chop it with the chives. Then mix it into the mixture. The amount of parsley and chives depends on your taste. Finely chop the garlic and mix it in as well. (Amount according to your taste) Now the mixture can be poured into the hollowed-out tomatoes. I pierce a small hole in the green part of the top with a thick darning needle and then stick a stalk of parsley into it. This gives each top a fun little parsley cap. Place this diagonally on the stuffed tomatoes and it looks very pretty. You can also add fried bacon cubes to the stuffed tomatoes if you like.
