Spirelli with peas, almond flakes and goat's cheese

Ingredients for 2 servings:

  • 120 g pasta (spirelli)
  • 150 g peas, frozen
  • 1 cup goat’s cheese
  • 20 g almond flakes
  • some white wine or broth
  • 1 small onion(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Simple, delicious and very light – a real summer dish

Cook the pasta according to the package instructions. Meanwhile, thinly slice the onion and sauté. When the onions are almost translucent, add the flaked almonds and lightly toast. Add the peas and let them thaw, stirring occasionally. When the peas are almost done, deglaze with a splash of white wine or a little stock and let it reduce. Drain the pasta and add it to the pan with the peas and almonds. Mix everything together. Season with salt and pepper. Serve on plates. Then place two (or more) dollops of goat’s cheese on top. The cheese will melt slightly, creating a wonderfully creamy texture.
