Spaghetti with goat cheese and cherry tomatoes

Ingredients for 4 servings:

  • 400g spaghetti
  • 150 ml olive oil, cold squeezed
  • ½ roll(s) of goat’s cheese
  • 250 g cherry tomatoes
  • ½ bunch basil
  • 1 garlic clove(s)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Slice the goat cheese roll, quarter it, and place it in a large bowl. Pour in the olive oil, season with pepper, and let it stand for 15 minutes. Peel and crush the garlic clove. Wash and quarter the cherry tomatoes. Rinse the basil, shake dry, and cut into strips. Add all ingredients to the goat cheese in the oil and let stand at room temperature. Cook the spaghetti in plenty of boiling salted water until al dente. Drain, add to the prepared ingredients in the bowl, mix everything well, and season with salt and pepper. This dish is best served lukewarm.
