Ingredients for 2 servings:
- 6 tbsp Greek yogurt
- 2 tbsp olive oil
- 1 clove(s) garlic
- ½ lemon(s), zest and juice
- ½ handful of lemon balm
- ½ handful of peppermint
- ½ handful of parsley, flat
- ½ bunch chives
- 1 tsp mustard
- ½ tsp coriander powder
- 1 pinch(s) of salt and pepper
- ½ cucumber(s)
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
with mint and cucumber
Wash half a cucumber, finely grate it, and squeeze out the water. Roughly chop the leaves of the fresh herbs and finely chop the stems, and add everything. Crush the garlic clove. Mix in the remaining ingredients. This dressing pairs well with leaf lettuce, tomatoes, olives, feta, and corn.
