Apple and chestnut dip with oriental spices and honey roasted onions

Ingredients for 6 servings:

  • 200 g cream cheese
  • 200 g sour cream or crème fraîche
  • 1 m.-sized apple, peeled, grated and squeezed vigorously
  • 200 g chestnuts, cooked and peeled
  • 1 large onion(s)
  • 1 tbsp spice mix, oriental (cinnamon, fennel, ginger, clove(s), pepper)
  • 1 tsp lemon juice
  • 1 tbsp honey
  • 2 tsp oil for frying

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Peel and grate the apple, squeeze out the juice, and drizzle with lemon juice. Dice the onion (white or red) and fry in the oil. As soon as it turns golden brown, add the honey and leave on the stove for about 1 minute. Then set aside to cool. Place the cream cheese, sour cream, apple, chestnuts, and oriental spice in a bowl and puree everything finely with a hand blender. You can make it very fine or a little coarser, depending on your preference. Fold in the cooled honey-fried onions and season with salt if desired. Tastes best when it has been allowed to marinate for a while. Best prepared a few hours in advance. Goes well with sweet potatoes, fries, fried potatoes, pointed cabbage, ciabatta, or raw vegetables. Tips: If you prefer something a little lighter, use light cream cheese with 0.2% fat and crème légère instead of sour cream. If you don’t like honey or prefer a stronger roasted onion flavor, simply leave out the honey when frying and fry the onions more thoroughly.
