Carrot stew

Spread the love

Ingredients for 4 servings:

  • 500 g carrot(s), diced
  • 500 g potatoes, diced
  • 4 sausages (Mettwurst / Mettenden)
  • 1 onion(s)
  • 1 cup broth, hot
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and dice the potatoes (roughly cube-sized). Clean the carrots and also cut them into roughly cube-sized pieces. Slice the Mettwurst sausages. Layer them in a pot as follows: potatoes, then carrots, then sausage slices, etc. Finish with potatoes (this is the order I usually do). Pour the broth over the potatoes and add the finely diced onion on top. Cover and simmer for about 30 to 45 minutes over low heat; do not remove the lid. When the potatoes and carrots are tender, mix everything together, season with pepper and salt. Serve hot.
