Light pasta salad

Ingredients for 6 servings:

  • 500 g pasta, whether penne or fusilli
  • 2 bags of ready-made salad dressing mix (with paprika)
  • 1 cucumber(s)
  • 6 tomatoes
  • 1 can of corn
  • salt and pepper
  • 2 tbsp mustard, medium hot
  • 1 package of feta cheese, diced
  • oil

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 20 minutes; Total time approx. 3 hours 40 minutes

very tasty – easy to make – great for grilling

Cook the pasta as usual in salted water, drain well, return it to the pot and oil it evenly so that it doesn’t stick together. Leave to cool (it’s best to cook the pasta the night before and make the salad in the morning so it can marinate until the barbecue). Wash the cucumber and tomatoes and peel the cucumber. Cut the cucumber and tomatoes into bite-sized pieces and add to the pasta. Drain the corn and add to the pasta. Mix the salad dressing as described on the packet with 3 tablespoons each of water and oil and then stir in 2 heaped tablespoons of mustard. Pour the dressing over the pasta and vegetables and stir well, then add salt and pepper to taste and stir in the cheese cubes. Then leave to marinate, if possible for around 3 hours.
