Ingredients for 4 servings:

  • 4 fish fillets (wild salmon, pangasius)
  • salt and pepper
  • 2 tbsp oil
  • 80 g olives, black
  • 5 tomatoes
  • 2 sprigs of thyme
  • 1 tsp balsamic vinegar

Preheat oven to 100 degrees Celsius (212 degrees Fahrenheit). Season the fish fillets with salt and pepper. Heat 1-2 tablespoons of oil in a pan and briefly sear the fillets on both sides. Then finish cooking in the oven for about 8 minutes. Meanwhile, slice the olives into rings, peel the tomatoes, and chop them roughly. Heat both briefly in the remaining oil and season with salt, pepper, thyme, and balsamic vinegar. Serve the fish fillets with vegetables and, if desired, baguette, whole-wheat baguette, or toast.
