Ingredients for 4 servings:
- 400 g rice
- 200 g Parmesan, freshly grated
- 1 tsp flour
- 1 egg(s)
- 1 bunch of radishes
- 40 g pine nuts
- 4 tbsp olive oil
- salt and pepper
- Oil for frying
- Parmesan for sprinkling

Prepare the rice according to the package instructions and then let it cool. Meanwhile, remove the green parts from the radishes, wash them thoroughly, and trim them. Then cut the radishes into very thin slices or grate them. Wash half of the radish greens thoroughly, pat them dry, and remove the stalks. Place the greens in a tall bowl with the olive oil and pine nuts and puree them into a pesto using a hand blender. If the mixture is too thick, add a little more oil. Mix the pesto with the radish slices and season with salt and, if desired, pepper. Now knead the rice with the egg, Parmesan cheese, and flour and season with salt and pepper. With wet hands, form the mixture into fritters. Heat a little oil in a non-stick pan and fry the fritters until golden brown on both sides. Arrange the fritters on plates, pour the radish pesto over them, and serve sprinkled with Parmesan cheese.
