Matjes with boiled potatoes, beans and bacon sauce

Ingredients for 4 servings:

  • 800 g potatoes, waxy
  • 400 g green beans
  • 150 g onion(s)
  • 100g bacon
  • 1 tbsp butter
  • 5 tbsp Balsamic vinegar Bianco
  • 250 ml chicken broth
  • 1 tsp sugar
  • 8 herring fillets
  • 1 bunch of chives
  • salt and pepper

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

especially delicious with young matjes

Boil the potatoes for 25 minutes, drain, and then peel. Trim the beans and cook in salted water for 10 minutes, then drain the cooking water. Peel and chop the onions by 2/3, then slice the rest into thin rings. Cut the chives into small rings. Dice the bacon and fry in a pan without fat. Add the butter and diced onions, sauté until translucent, then deglaze with stock and vinegar and bring to a boil. Season with salt and pepper and add the chives to the sauce. Rinse the herring fillets, pat dry, and top with the onion rings. Serve with the potatoes, green beans, and bacon sauce.
