Potatoes with herring salad filling

Ingredients for 4 servings:

  • 4 large potatoes, each approx. 150 g
  • 6 herring fillets, each approx. 60 g
  • 1 apple
  • 4 gherkins
  • 100 g spring onions
  • 1 tbsp lemon juice
  • 200 g sour cream
  • 6 tbsp milk
  • salt and pepper
  • 1 pinch(s) of sugar
  • Dill and lemon wedges for garnishing

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Wash the potatoes thoroughly and cook in boiling water for about 20 minutes. Meanwhile, cut the herring into pieces. Quarter the apple and core it. Dice the apple and cucumber. Slice the spring onions into rings. Mix everything loosely and drizzle with lemon juice. Stir in the sour cream and milk until smooth. Pour over the salad and mix well. Season with salt, pepper, and sugar. Drain the potatoes, rinse in cold water, and break up the skins a little. Arrange the potatoes on plates. Spoon the herring salad over the salad. Garnish with dill and lemon wedges.
