Herring with potatoes according to Eduard Konrath

Ingredients for 10 servings:

  • 20 herring fillets (matjes or salted herring)
  • 3 onions
  • 2 apples
  • 400 g sour cream
  • 5 tbsp mayonnaise
  • 5 tbsp white wine
  • 3 tbsp Dijon mustard
  • 3 tbsp parsley, chopped
  • salt and pepper
  • 1 ½ kg potatoes

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Wash the herring fillets and pat dry. Dice the onions and apples. In a bowl, combine the sour cream, mayonnaise, white wine, mustard, parsley, salt, and pepper. Stir the chopped onions and apples into the sauce. Add the herring fillets to the sauce and stir gently. Boil the potatoes in salted water for about 20-25 minutes. Drain and peel the potatoes.
