Ingredients for 7 servings:
- 1 kg potatoes, waxy
- 4 m.-sized tomatoes
- 1 cucumber(s)
- 14 eggs
- 3 bell peppers, red, yellow, green
- some salt and pepper
- some oil
- 200 g bacon
- 3 m.-sized onion(s)
- 200 g leek
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour
Simply clean the potatoes and cook them in a pot as jacket potatoes. In the meantime, wash and clean the vegetables. Dice the tomatoes, cucumber, and bell peppers and slice the leek. Rinse the cooked potatoes in cold water, peel, and slice. Heat a little oil in a large, deep pan (if you have one, otherwise use a casserole dish). Add the potato slices and fry. When the potatoes turn golden brown, add the bacon and sauté. Now add the vegetables, mix everything well, and sauté lightly. Meanwhile, preheat the oven to 100°C. Crack the eggs and season with salt and pepper. Season the fried potatoes as well. Pour the beaten egg into the pan until everything is covered. Pierce 1 or 2 holes to allow the egg to seep through. Then continue heating for 1-2 minutes. Now place the pan in the oven and cook for 30 minutes at approximately 100°C. Once everything is cooked, you can slice it like a cake and serve it.
