Ingredients for 2 servings:

  • 450 g vegetables of your choice (e.g. frozen Kaiser vegetables)
  • 300 g potatoes, cooked
  • 220 ml egg white
  • 1 whole egg
  • 200 g minced meat, alternatively veggie mince
  • Spice(s) of your choice
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

high in protein and low in fat

Chop the vegetables if necessary or thaw frozen vegetables (I used Kaisergemüse). In the meantime, preheat the oven to 175°C fan/convection oven. Mix the egg whites with the egg and spices. I used smoked salt, pepper, paprika, garlic powder, curry powder, and red Thai curry paste. Heat the vegetables and potatoes with a splash of water in an ovenproof pan, then add the vegetarian mince. Raw mince must be cooked thoroughly first. Pour the egg white mixture over the vegetables and let it set slightly. Then return to the preheated oven for about 15 minutes.
