Asparagus and zucchini pan

Ingredients for 2 servings:

  • 2 zucchini or 3
  • 1 kg white asparagus
  • 2 onions
  • 1 garlic clove(s), or 2
  • 1 dash of soy sauce
  • 1 dash of olive oil
  • salt and pepper
  • chili flakes
  • Paprika powder, sweet
  • Fresh herbs, to taste
  • 2 dashes lemon juice

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel the asparagus and cut into bite-sized pieces, wash the zucchini and also cut into pieces. Peel and roughly chop the onion. Finely chop the garlic. Place the vegetables in a microwave-safe container. Season well with spices, soy sauce, lemon juice, and olive oil. Pre-cook everything for 8 minutes at around 600 watts. Then transfer to an aluminum tray and grill with fresh herbs. Grill for 15-20 minutes, depending on taste and firmness. Stir several times on the grill. It can of course also be prepared without a microwave and in the oven at 180°C fan-assisted oven, but you should blanch the asparagus and zucchini briefly beforehand to prevent them from burning on the grill/in the oven. I also added fresh cress and herb butter.
