Ingredients for 10 servings:
- 1 bunch of green asparagus
- 250 g smoked tofu
- olive oil
- salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Trim the woody ends from the green asparagus and peel the lower third, if desired. Cut the asparagus spears into 3-5 pieces. Cut the smoked tofu into large cubes. Then alternate two asparagus pieces with one piece of smoked tofu (asparagus-asparagus-tofu-asparagus-asparagus-tofu-asparagus-asparagus) on skewers, brush with olive oil, and sprinkle with pepper and salt. Grill until the smoked tofu is nice and crispy. Delicious on its own or with a herb dip, such as soy yogurt with chives. Makes about 10 skewers.
