Tomato salad à la Mio

Ingredients for 4 servings:

  • 500 g cherry tomatoes
  • 3 onions, red
  • 2 packs of mozzarella
  • ½ bunch chives
  • ¾ bunch basil
  • 90 ml olive oil
  • 5 tbsp balsamic vinegar
  • 5 tbsp herbs de Provence
  • salt and pepper
  • Sugar

Working time approx. 20 minutes; Total time approx. 20 minutes

The quick delicacy – recommended not only as a side dish…

First, wash the tomatoes and chop them as desired. I personally just halve them, as this keeps them a bit crunchy. Next, chop the onions into small pieces, as well as the chives and basil. Now you can cut the mozzarella into bite-sized pieces. Mix all the ingredients together in a large bowl. Add the olive oil, balsamic vinegar, and herbs de Provence. Finally, season the salad with pepper, salt, and a generous pinch of sugar. It’ll do just fine overnight in the fridge!
