Ingredients for 4 servings:
- ½ meat sausage without garlic
- 1 small jar of red cabbage or 1 small head
- 3 cups couscous
- 1 cup of natural yogurt
- salt and pepper
- Garlic
- chili flakes
- coriander
- Sugar
- lemon juice
- possibly vinegar
- possibly oil
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Prepare the couscous according to the package instructions (we actually always use the soaking method). If the cabbage is fresh, chop it and knead it in a bowl with salt, then let it sit for a while. Fresh red cabbage can also be served as a salad garnish with this dish – this is where the coriander comes in, giving the whole thing a slightly oriental touch. For the salad, prepare the cabbage as described and then mix it with vinegar, oil, pepper, and coriander to taste. Unfortunately, jarred red cabbage only needs to be heated. Now cut the pork sausage into approximately 1 cm thick slices and fry over medium heat without adding any fat. Meanwhile, make a thick sauce from the yogurt. Simply mix the yogurt with sugar, salt, chili flakes, and lemon juice (concentrate also works, but please mix it with a little water). Add garlic to taste. Serve the couscous with the cabbage and pork sausage.
