Zucchini, tomato and feta salad

Ingredients for 2 servings:

  • 1 large zucchini
  • 2 large tomatoes
  • 1 shallot(s)
  • ½ pack of feta cheese, made from sheep and goat milk
  • 1 garlic clove(s)
  • 1 handful of sunflower seeds
  • basil
  • pepper
  • Butter for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

simple, tasty and quick to prepare

Wash the zucchini and tomatoes. Dice the zucchini, fry in a little butter until browned, and place in a bowl. Then, in the same pan, sauté the chopped garlic and gently roast the sunflower seeds. Dice the tomatoes, halve the shallot, and thinly slice. Dice the feta and slice the basil. Combine everything in a bowl, mix well, and season with pepper. It’s perfect for grilling or simply with freshly baked bread on warm summer days.
