for 8 rolls
Place all the dough ingredients in a bowl and knead with your hands until you have a smooth dough. Cover and let rest in a warm place for about an hour. Then shape the dough into a log and divide it into eight equal pieces. Shape each piece into a ball, then flatten slightly and place it on a baking sheet lined with baking paper. Let the rolls rise for another 30 minutes. Brush with milk and, if desired, sprinkle with coarse salt and/or caraway seeds. Bake in an oven preheated to 200°C for about 20 minutes, until light brown. Note: They taste best when still lukewarm, but they also freeze well.
