Ingredients for 1 servings:
- 4 rice cakes or spelt wafers
- 1 carrot(s)
- 1 small bell pepper(s)
- 1 stalk(s) Celery
- 1 small lettuce heart(s) or 1 handful of lamb’s lettuce
- 1 small apple
- 1 tsp apple cider vinegar
- 5 tbsp olive oil
- some sea salt and pepper
- 2 tbsp, heaped herbs, fresh, e.g. dill

Working time approx. 10 minutes; Rest time approx. 2 minutes; Total time approx. 12 minutes

Wash and trim the vegetables and dice them into the desired size. Place them in a salad bowl. Break up the rice or spelt waffles and add them. Drizzle with the vinegar, oil, salt, and herbs and mix well. Let stand for 2 minutes before serving so the waffles can absorb the vinaigrette. Tip: You can also add mozzarella or feta cheese, if desired.
