Bread salad with rice cakes or spelt waffles

Ingredients for 1 servings:

  • 4 rice cakes or spelt wafers
  • 1 carrot(s)
  • 1 small bell pepper(s)
  • 1 stalk(s) Celery
  • 1 small lettuce heart(s) or 1 handful of lamb’s lettuce
  • 1 small apple
  • 1 tsp apple cider vinegar
  • 5 tbsp olive oil
  • some sea salt and pepper
  • 2 tbsp, heaped herbs, fresh, e.g. dill

Instructions

Working time approx. 10 minutes; Rest time approx. 2 minutes; Total time approx. 12 minutes

vegetarian, suitable for histamine intolerance

Wash and trim the vegetables and dice them into the desired size. Place them in a salad bowl. Break up the rice or spelt waffles and add them. Drizzle with the vinegar, oil, salt, and herbs and mix well. Let stand for 2 minutes before serving so the waffles can absorb the vinaigrette. Tip: You can also add mozzarella or feta cheese, if desired.
