Potatoes in pastry

Ingredients for 4 servings:

  • 500 g potatoes
  • 2 tbsp flour
  • salt and pepper
  • 100 g flour
  • 1 tsp baking powder
  • ½ tsp vinegar
  • Oil for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and slice the potatoes. Then blanch in boiling water for 2 minutes. Drain and pat dry with kitchen paper. Season the flour with salt and pepper. Toss the potato slices in the flour. Sift the flour and baking powder into a bowl. Add the vinegar and 150 ml of water, stirring until a thick batter forms. Heat plenty of oil in a deep fryer to 180 degrees Celsius. Dip the potato slices one at a time in the batter and fry in batches in the oil for 1-2 minutes. Drain on kitchen paper. I always serve this with fish fingers and peas.
