Ingredients for 2 servings:

  • 500 g potatoes, waxy
  • 250 g clarified butter
  • n. B. spice mix

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

For the spice mix, mix together fine salt, finely ground white pepper, and sweet paprika. Wash and peel the potatoes, and cut them into small cubes. Blanch them in lightly salted, simmering water for 3 minutes, then drain and steam. Heat the clarified butter in a wok pan to 180°C. Fry the blanched potatoes in the oil for about 5 minutes, stirring constantly. Then remove them with a slotted spoon and steam them in a wide dish. After another 5 minutes, return the still-hot cubes to the hot oil and continue to fry, stirring, until evenly browned. Use the slotted spoon to return the fries to the dish and season with the spice mix, stirring as desired. The crispy fries are now ready to serve with ketchup or any kind of dip.
