Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Cut the peeled potatoes into small pieces using a French fry cutter, blanch briefly, and then rinse in cold water. Pat dry thoroughly and bake in the oven until the fries no longer release any water (in a convection oven at about 50-80 degrees Celsius, this takes about an hour, depending on the thickness of the fries). Then deep-fry or freeze. These fries are a real treat!
