Pasta pan with sausage and tomato sauce à la Birthie

Ingredients for 4 servings:

  • 300 g pasta, e.g. spiral pasta
  • 1 red bell pepper(s)
  • 1 bell pepper(s), green
  • 2 m.-sized onion(s)
  • 1 zucchini
  • 200 g meat sausage
  • some sunflower oil
  • 1 tbsp parsley, chopped
  • 2 tsp, heaped herbs de Provence, dried
  • salt and pepper
  • 1 small can of tomatoes, peeled, whole
  • 2 tbsp soy cream (Soy Cream Cuisine) or whipped cream
  • ½ tsp sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Also good with other vegetables, ideal for using up leftovers

Cook the pasta in salted water and drain. Peel the onions. Cut the onions, peppers, zucchini, and sausage into approximately 1 x 1 cm pieces. Heat the oil in a large pot and fry the vegetables, stirring occasionally. Heat the oil in a pan and fry the sausage. Once the vegetables are cooked, add the pasta and sausage, stir, add 1 teaspoon of Provençal herbs and parsley, and season with salt and pepper. For the sauce, combine the tomatoes, 1 teaspoon of Provençal herbs, soy cream, salt, pepper, and sugar in a pot and bring to a boil. Mash the whole tomatoes with a potato masher or puree with an immersion blender. Serve the pasta dish with the sauce. You can also add broccoli, corn, or other vegetables to the pasta dish.
