Pasta with chanterelles and goat's cheese

Ingredients for 2 servings:

  • 200 g ribbon pasta, short, curly
  • 100 g goat’s cheese
  • 12 cocktail tomatoes
  • 4 small pickled cucumbers
  • 1 bunch of spring onions
  • 200 g chanterelles
  • Oil for frying
  • possibly butter
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cook the pasta according to the package instructions. Slice the spring onions into rings. Clean and chop the chanterelles, and fry them with the spring onions in a little oil. I always add a knob of butter. Halve the cherry tomatoes, peel and chop the gherkins, and add both. Drain the pasta and add it to the pan. Mix everything together and season with salt and pepper. Finally, sprinkle the goat’s cheese in small flakes on top.
