Pear carpaccio with cheese and mustard sauce

Ingredients for 2 servings:

  • 1 large pear(s)
  • 100 g blue cheese
  • 3 tbsp mustard (fig mustard)
  • 3 tbsp vinegar, milder (fruit vinegar, tried with wild berry vinegar)

Instructions

Working time approx. 15 minutes; Rest time approx. 15 hours; Total time approx. 15 hours 15 minutes

Peel the pear, halve it, and remove the core. Then cut it into thin slices and arrange the slices on a large, flat plate. Cut the cheese into small pieces and arrange them on top of the pear slices. Mix the fig mustard with the vinegar and drizzle over the pear. Let it rest a little before serving. Instead of blue cheese, you can also shave a strong hard cheese like Pecorino or Parmesan over the top.
