Ingredients for 4 servings:
- 3 balls of mozzarella
- 6 large beefsteak tomatoes
- 2 mangoes, ripe
- 10 tbsp olive oil
- 2 chili peppers
- 2 tbsp curry powder
- 1 spring onion(s)
- salt and pepper
- Balsamic vinegar
Instructions
Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes
Slice the mozzarella and tomatoes, peel the mango, remove the flesh from the pit, and cut into bite-sized pieces. Then layer everything on a platter in a layered manner. For the dressing, heat the olive oil in a pan, add the sliced chili peppers and curry powder, and heat gently, stirring constantly. Season with salt, pepper, and balsamic vinegar, and toss the chopped spring onion in the dressing for a few seconds. Pour the dressing over the tomato, mango, and mozzarella layer and let the salad marinate for a while.
