Banana bread or banana cake

Ingredients for 4 servings:

  • 2 large bananas, preferably ripe
  • 1 m.-sized egg(s)
  • 1 tbsp honey, liquid
  • 50 g butter, soft
  • 75 g sugar
  • 225 g flour
  • 3 tbsp natural yogurt
  • 2 tsp baking powder
  • 1 pinch of salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Golden brown on the outside, soft on the inside

Preheat the oven to 180°C. Line a 1 kg bread pan with baking paper (a regular loaf pan). Mash the bananas until soft. Lightly beat the eggs and add them to the bananas along with the honey. In another bowl, beat the butter and sugar vigorously until light and creamy. Add the banana mixture and mix well. Mix together the salt, flour, and baking powder. Sift one-third of this over the banana mixture, add one tablespoon of yogurt, and mix well. Then add another third of the flour and another tablespoon of yogurt and mix well again. Repeat this process one more time until the mixture is completely incorporated into the batter. Pour the batter into the pan and bake for 50-60 minutes. Check with a skewer before removing the bread from the pan and let it cool on a wire rack.
