Avocado and strawberry salad

Ingredients for 3 servings:

  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1 tbsp maple syrup
  • ½ lemon(s)
  • salt and pepper
  • 500 g strawberries
  • 1 avocado(s)
  • 125 g arugula or other crunchy lettuce

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine olive oil, balsamic vinegar, maple syrup, and the juice of half a lemon in a large bowl and mix well. Season with salt and pepper. Rinse and quarter the strawberries. Add the strawberries to the bowl along with the arugula. Peel and pit the avocado, dice it, add it to the salad, and gently toss everything together. Serve the strawberry-avocado salad immediately. Variation: You can also use crumbled feta cheese instead of the avocado.
