Ingredients for 4 servings:
- 600 g tomatoes
- 400 g meat sausage in one piece
- 1 small onion(s)
- salt and pepper
- 3 tbsp olive oil
- 3 tbsp balsamic vinegar
- Herbs of Provence

Refreshing summer salad
Wash the tomatoes, dry them, and slice them. Cut the sausage (with or without garlic, to taste) into thin strips. Finely dice the onion. Mix a marinade of olive oil, balsamic vinegar, and 1 tablespoon of water, season with salt, pepper, and herbs, and pour it over the ingredients. Let the salad marinate for 15 minutes. I always add a few leaves of fresh basil for garnish.
