Ingredients for 4 servings:
- 8 slices of wholemeal toast
- 1 tomato(s)
- 50 g olives, pureed to a paste
- 125 g mozzarella, sliced
- 4 basil leaves
- 2 eggs
- Flour and breadcrumbs for breading
- oil
- salt and pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Baked toast bread filled with mozzarella
Spread 4 slices of toast with olive paste on one side, top with tomatoes, mozzarella, and basil, then cover with the remaining slices and press down firmly. Coat the bread in flour, eggs, and breadcrumbs and fry in hot oil until golden brown. Cut diagonally, season with salt and pepper, and serve. Serve with a green salad.
