Ingredients for 4 servings:
- 4 turkey schnitzels
- 5 tsp pesto, red
- 4 tsp Parmesan, coarsely grated
- 4 slices of Parma ham
- 3 tbsp olive oil
- 2 tbsp orange juice
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Wash and flatten the schnitzel. Brush the schnitzel with pesto, season with salt and pepper, sprinkle with 1 teaspoon of Parmesan cheese, and top with a slice of ham. Fold the schnitzel over and secure the edges with toothpicks. Heat oil in a pan and fry the schnitzel for 3-4 minutes on each side. Loosen the pan juices with the orange juice and drizzle over the schnitzel. We like to serve this with roasted potatoes.
