Guacamole for the calorie-conscious

Spread the love

Ingredients for 2 servings:

  • 1 avocado(s), ripe
  • ½ cucumber(s)
  • 1 small onion(s)
  • 2 garlic cloves
  • 1 chili pepper(s), fresh or dried
  • 2 cherry tomatoes
  • 1 lemon(s)
  • 200 ml yogurt (0.1% fat)
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Quarter a ripe avocado, peel off the skin, and remove the pit. Pour the juice of one lemon over the sliced avocado flesh. Roughly chop half a peeled cucumber into blendable pieces. Peel and roughly dice the onion. Add chili peppers and garlic cloves to your liking, so it’s not too spicy for everyone. Add the whole cherry tomatoes and blend everything in a suitable container using an immersion blender. I’ve noticed that blending the vegetables for too long develops a banana-like flavor, which I don’t like, so I only blend briefly. Stir in the yogurt at the end and season with salt and pepper to taste.
