Rinse the chicken breast under running water, pat dry, and slice. Heat a little olive oil in a pan. Fry the chicken breast slices in the pan, season with salt and pepper to taste. Remove the chicken from the pan and keep warm. For the tomato and onion sauce, dice the onions and tomatoes. Heat a little olive oil in a pan, sauté the onions until translucent, add the tomatoes, and sauté. Briefly rinse the thyme sprig, strip the leaves from the stems, and scatter them over the onion and tomato mixture. Plate the chicken breast and pour the sauce over it. Serve with tagliatelle, green salad, or broccoli.
