a recipe from my friend Fred’s mother
Remove the stems and ends from the beans and remove the strings. Cut the beans into pieces about 2 cm long. Peel and dice the potatoes. Peel and dice the onion. Finely dice the bacon and fry it over low heat in a sufficiently large pot. Add a knob of butter and sauté the onions until they are translucent and have turned a very light brown color. Add the beans and potato cubes and pour in 400 ml of water. Season with 1 teaspoon of salt, then simmer for 30 minutes over low heat. Add about 1 teaspoon of savory and the smoked pork, and simmer for another 10 minutes. Finally, season to taste with a little pepper and a little more salt if desired. If you like, you can thicken the stew with a little cornstarch until smooth. To do this, stir a little cornstarch into a little water, add to the stew, and bring back to a boil briefly.
