Ingredients for 1 servings:

  • 250 g mashed potatoes
  • 1 egg(s)
  • 100 g bacon cubes
  • 1 onion(s)
  • 100 g peas, frozen
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Whisk the egg and mix with the mashed potatoes. Sauté the onions, bacon, and peas over medium heat with a little butter or oil. Then add to the mashed potatoes and mix. If it becomes too runny, simply add a little more cornstarch. Shape the mashed potatoes into small cakes and fry them in a non-stick frying pan with a little butter or oil over medium heat until golden brown on both sides. Variation: You can, of course, jazz up the cakes with other ingredients. For a vegetarian version, simply replace the bacon cubes with something like leeks, zucchini, or mushrooms. For a Mediterranean touch, you can also use sun-dried tomatoes, olives, and basil.
