Ingredients for 2 servings:

  • 2 trout(s)
  • 2 sprigs rosemary
  • 1 lemon(s)
  • bunch of parsley
  • Flour
  • pepper
  • Salt
  • 4 tbsp olive oil
  • 1 tbsp butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Wash the trout and pat dry. Season inside and out with pepper and salt. Rinse the rosemary, pat dry, and place a sprig into each trout. Rinse the parsley, pat dry, pick off the leaves, and add them to the rosemary and the trout. Coat the fish in flour. Heat olive oil and butter in a pan. Fry the trout in the hot fat for about 5-10 minutes on each side (depending on the size of the fish) until browned. Serve on plates with a lemon wedge on each plate. If desired, pour some of the fat from the pan over the trout. Serve with salad and mashed potatoes or boiled potatoes.
