Banana chocolate poppy seed muffins

Ingredients for 1 servings:

  • 200 g flour
  • 1 packet of baking powder
  • 30 g cocoa powder
  • 30 g poppy seeds
  • 2 eggs
  • 120 g sugar
  • 4 banana(s), ripe
  • 100 ml oil
  • 10 g icing sugar for sprinkling
  • some fat for the mold

Instructions

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

for a 12-cup muffin tray

In a large bowl, mix the flour with baking powder, cocoa, and poppy seeds. In a small bowl, whisk the egg, add the sugar, and mix with the oil. Separately, mash the bananas with a fork until creamy, then add them to the egg and sugar mixture and mix. Add this mixture to the other ingredients in the large bowl and stir with a large spoon until you have a smooth batter. Spoon the batter into the wells of a greased muffin tin or lined with paper baking cups. Bake in a preheated oven at 180°C (top/bottom heat) for about 30 minutes on the middle rack. Then let it cool and sprinkle with powdered sugar. Alternatively, you can omit the poppy seeds or double the amount.
