Strawberry-walnut muffins

Ingredients for 1 servings:

  • 140 g flour
  • 120 g wholemeal flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • 60 g walnuts, chopped
  • 200 g strawberries
  • 1 egg(s)
  • 180 g brown sugar
  • 100 ml oil, neutral
  • 1 vanilla sugar
  • 250 g yogurt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

for 12 pieces

Preheat the oven to 180°C (top/bottom heat). Sift the flour into a bowl and gently mix with the wholemeal flour, baking powder, baking soda, cinnamon, and nuts. Roughly chop the strawberries. In another bowl, break the egg and whisk lightly. Then add the sugar, oil, vanilla sugar, and yogurt and mix. Then add the flour mixture and finally gently fold in the strawberry pieces. Place 12 paper muffin cases into the holes in the baking tray and fill with the batter. Bake in the hot oven for approx. 20-25 minutes until golden brown. Let rest in the tray for 5 minutes, then carefully remove and let cool.
