Pulled Pork Spaghetti

Ingredients for 4 servings:

  • 300g pulled pork
  • 500 g whole wheat spaghetti
  • 60 ml olive oil
  • 1 bell pepper(s), yellow
  • 1 onion(s), red
  • 4 garlic cloves
  • 500 ml canned tomatoes, chopped
  • 4 tbsp beetroot
  • ½ tsp cinnamon
  • 1 tbsp mustard powder
  • 1 tsp sea salt
  • 1 tsp pepper
  • ½ bunch parsley

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

with whole wheat pasta

Heat the olive oil in a large pot, finely chop the onions and garlic, and sauté until translucent. Dice the bell peppers. After about five minutes, add the tomatoes, turnip greens, bell peppers, and seasonings to the pot, and simmer on low heat for 20-30 minutes. Now add the pulled pork and simmer for another 10-15 minutes. In the meantime, bring the pasta water to a boil and cook the pasta until al dente. Finally, add 1-2 ladles of the pasta water to the sauce to thin it out and infuse the pasta with some flavor. Add the pasta to the sauce and mix everything together well.
