Ingredients for 1 servings:

  • 700 ml white wine vinegar
  • 2 tbsp salt
  • 4 tbsp sugar
  • 4 bay leaves
  • 6 allspice berries
  • 2 onions, roughly chopped
  • 1 tsp peppercorns
  • 4 tbsp mustard seeds
  • 2 tsp black pepper
  • tsp chili flakes
  • 3 sprigs of tarragon
  • 3 tbsp dill, chopped
  • 6 juniper berries

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Bring the vinegar to a boil with the herbs, spices, and onions. Simmer for about 5 minutes. Remove the tarragon sprigs and pour the liquid into prepared bottles. It’s best if the bottles have a slightly wider neck, as this makes it easier to add the onions. I like to make the vinegar in advance and sometimes mix it with different types of vinegar, such as apple cider vinegar, rice vinegar, or even light balsamic vinegar.
