Rice pudding flakes with fruit puree

Ingredients for 1 servings:

  • 50 g rice flakes
  • 150 ml milk
  • 100 ml water
  • 100 ml coconut milk, light
  • 1 pinch of salt
  • n. B. Sweetener
  • 1 apple
  • 1 nectarine(s)
  • some water
  • Chia seeds
  • hemp seeds
  • Coconut blossom sugar

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Cooks faster than rice pudding, delicious and perfect for autumn

Combine the regular milk and water in a saucepan. Add the rice flakes, bring to a boil, and then add the coconut milk. Then simmer over medium-low heat, stirring occasionally, until the rice thickens. Add a pinch of salt and sweetener of your choice. Slice the apple and nectarine, remove the core and pit, and sauté the flesh in a little water. When the fruit is soft enough, puree it. Place the rice pudding flakes in a bowl, add the pureed fruit, and sprinkle with chia seeds, hemp seeds, and a little coconut blossom sugar. Enjoy on the couch with a cup of tea.
