Peach-Passion Fruit Muffin

Ingredients for 1 servings:

  • 240 g flour (Type 405)
  • 120 g sugar
  • 100 g sour cream
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp orange peel, grated
  • 2 peaches, fresh or from the can
  • 1 egg(s)
  • 100 ml oil
  • 140 ml passion fruit juice

Preheat oven to 160°C fan/convection oven (190°C electric oven). Peel the peaches and cut into small pieces. In a bowl, combine the flour, baking powder, baking soda, and peach pieces. In another bowl, beat the egg, sugar, oil, sour cream, passion fruit juice, and orange zest until frothy and fold in the flour mixture. Pour batter into muffin cups and bake for approximately 20-25 minutes. Let the muffins rest for 5 minutes, then remove from the cups and let cool on a wire rack. Decorate as desired.
