Mango and avocado salad with rocket

Ingredients for 2 servings:

  • 1 mango(s)
  • 1 avocado(s)
  • 1 bunch arugula
  • 50 g feta cheese
  • 50 g bacon, diced
  • 2 eggs
  • 6 tbsp red wine vinegar
  • 6 tbsp sunflower oil
  • 1 tbsp honey
  • 1 tbsp mustard, medium hot
  • 1 pinch of chili powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Peel and dice the mango, and place it in a large bowl. Peel and dice the avocado, and add it to the bowl. Wash the arugula and add it to the bowl. Dice the feta and add it to the bowl. Hard-boil the eggs and briefly fry the bacon. Meanwhile, mix the vinegar, oil, mustard, honey, and chili powder. Once the eggs are hard-boiled, peel and quarter them. Pour the dressing over the salad and garnish with the bacon and eggs.
