Ingredients for 1 servings:

  • 500 g low-fat curd cheese
  • 200 g oat bran
  • 100 g oat flakes
  • 30 g flaxseed
  • 5 eggs
  • 1 packet of baking powder
  • 1 tsp salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 48 minutes; Total time approx. 58 minutes

Line a loaf pan with baking paper. Mix all ingredients thoroughly in a bowl. Pour the batter into the loaf pan. Bake in a preheated oven at 180°C (top/bottom heat) for 40 minutes. Remove the pan and bake the bread for another 8 minutes on the baking paper alone. This is the first protein bread that completely won me over with its consistency and flavor. It also tastes great with carrot sticks, sun-dried tomatoes, onions, garlic, and much more—the sky’s the limit. Note from Chefkoch.de: Because flaxseed contains a relatively high cadmium content, the German Federal Center for Nutrition recommends no more than 20 g of flaxseed per day. Your daily bread consumption should be adjusted accordingly.
