Ingredients for 1 servings:

  • 500 g sugar
  • 1 vanilla pod(s)
  • ¼ tonka bean(s)

Instructions

Working time approx. 10 minutes; Rest period approx. 14 days; Total time approx. 14 days 10 minutes

Place the sugar in a tightly sealed container. Split open the vanilla pod and scrape out the seeds. Finely grate 1/4 of the tonka bean (using a nutmeg grater) and stir it into the sugar along with the vanilla seeds. Submerge the scraped vanilla pod in the sugar. Seal the container and let it steep for about 2 weeks. Use in desserts, Christmas cookies, cake batter, cream, etc. It’s also great in liqueurs.
