- 250 g sea salt, coarse

Clean fresh lovage and pluck the leaves from the stems. Mix with sea salt and blend until finely ground in a food processor. Pour the mixture into a shallow bowl, mix thoroughly, and let it air dry. This process can take 1-2 days. Place the dried lovage salt in a spice grinder—it’s now ready to use. It’s versatile and adds a unique flavor to many dishes.
